The Modern Conveyor Pizza Oven Process

Your conveyor oven uses powerful fans to drive 500°F air through finger nozzles and directly onto the top and bottom of every pizza. That high-velocity airflow is what gives your product its fast, consistent bake.


But when the oven is dirty, that same airflow can work against you.
 

As dough, cheese, oils, grease, and food particles spill and burn inside the oven, they create a layer of greasy carbon buildup on the conveyor, fingers, fans, and bake chamber. Over time, heat breaks down that residue and turns it into smoke, vapor, and fine airborne particles.


Those particles do not stay in one place. They circulate through the oven, pass through the fans, and are blown back through the finger nozzles directly onto the pizza.That means grease, oils, smoke, and fine carbon residue can be carried by the cooking air and deposited onto the top and bottom of fresh product as it bakes.

The more product that moves through the oven, the faster residue builds up. The more residue that builds up, the more greasy carbon contamination circulates through the bake chamber.

A dirty oven does not just affect the inside of the machine. It affects the quality, taste, aroma, and consistency of the pizza you serve.

When grease and oils are heated beyond their smoke point, they can become airborne as fine particles. This process, known as aerosolization, produces harsh smoke and unpleasant odors. It can also release acrolein, an irritating compound associated with the acrid smell of overheated grease and burned food.

Your store should smell like fresh cooked pizza only.
